Keto Instant Pot Spice Cake[edit | edit source]
Ingredients[edit | edit source]
- 2 cups of Almond Flour
- 1/2 cup of Coconut Flour
- 1/2 cup of Erythritol
- 1 teaspoon of Baking Powder
- 1/2 teaspoon of Baking Soda
- 1 tablespoon of Ground Cinnamon
- 1/2 teaspoon of Ground Nutmeg
- 1/2 teaspoon of Ground Ginger
- 1/4 teaspoon of Ground Cloves
- 1/2 cup of Unsalted Butter, melted
- 4 large Eggs
- 1/2 cup of Unsweetened Almond Milk
- 1 teaspoon of Vanilla Extract
Instructions[edit | edit source]
- In a large bowl, combine almond flour, coconut flour, erythritol, baking powder, baking soda, and spices. Mix well.
- In a separate bowl, whisk together melted butter, eggs, almond milk, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
- Pour the batter into a greased Instant Pot cake pan.
- Cover the pan with foil and place it on the trivet in the Instant Pot.
- Add 1 cup of water to the Instant Pot, then secure the lid and set the valve to sealing.
- Cook on high pressure for 50 minutes, then allow a natural pressure release for 10 minutes.
- Carefully remove the cake from the Instant Pot and let it cool before serving.
