Keto Key Lime Pie with Meringue Crust[edit | edit source]

- Meringue Crust
- 4 Egg Whites
- 1/4 cup Erythritol
- 1/2 tsp Cream of Tartar
- Key Lime Filling
- 1/2 cup Key Lime Juice
- 1/2 cup Erythritol
- 5 Egg Yolks
- 1/2 cup Unsalted Butter
- 1 tbsp Gelatin
- 1/4 cup Boiling Water
- Whipped Cream Topping
- 1 cup Heavy Cream
- 2 tbsp Erythritol
Instructions[edit | edit source]
- Preheat your oven to 325°F (163°C).
- In a large bowl, beat the egg whites, erythritol, and cream of tartar until stiff peaks form.
- Spread the meringue mixture into a pie dish, forming a crust. Bake for 20 minutes, or until golden brown.
- While the crust is baking, prepare the key lime filling. In a saucepan, combine the key lime juice, erythritol, egg yolks, and butter. Cook over medium heat, stirring constantly, until the mixture thickens.
- In a small bowl, dissolve the gelatin in the boiling water. Stir this into the key lime mixture.
- Pour the key lime filling into the baked meringue crust. Refrigerate for at least 2 hours, or until set.
- For the whipped cream topping, beat the heavy cream and erythritol until soft peaks form. Spread this over the set key lime pie.
