Keto Key Lime Pie with Meringue Crust[edit | edit source]

  1. Preheat your oven to 325°F (163°C).
  2. In a large bowl, beat the egg whites, erythritol, and cream of tartar until stiff peaks form.
  3. Spread the meringue mixture into a pie dish, forming a crust. Bake for 20 minutes, or until golden brown.
  4. While the crust is baking, prepare the key lime filling. In a saucepan, combine the key lime juice, erythritol, egg yolks, and butter. Cook over medium heat, stirring constantly, until the mixture thickens.
  5. In a small bowl, dissolve the gelatin in the boiling water. Stir this into the key lime mixture.
  6. Pour the key lime filling into the baked meringue crust. Refrigerate for at least 2 hours, or until set.
  7. For the whipped cream topping, beat the heavy cream and erythritol until soft peaks form. Spread this over the set key lime pie.
