Keto Mushroom Supremo Pizza is a delicious, low-carb alternative to traditional pizza. It's packed with flavor and is perfect for those following a keto diet.
Ingredients[edit | edit source]
- 1 cauliflower head, large
- 2 eggs
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 cup mushrooms, sliced
- 1/2 cup green bell pepper, diced
- 1/2 cup red onion, diced
- 1/2 cup black olives, sliced
- 1/2 cup tomato sauce
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
- Cook the cauliflower rice in a skillet over medium heat until it's soft.
- Let the cauliflower cool, then squeeze out as much moisture as possible.
- In a bowl, combine the cauliflower, eggs, half of the mozzarella, parmesan, salt, pepper, and garlic powder.
- Press the mixture onto a baking sheet lined with parchment paper, forming a pizza crust.
- Bake the crust for 20 minutes, or until it's golden brown.
- Spread the tomato sauce over the crust, then top with the remaining mozzarella, mushrooms, bell pepper, onion, and olives.
- Bake for another 10 minutes, or until the cheese is melted and bubbly.
