Keto Rib Eye Steak with Oven Roasted Vegetables[edit | edit source]
Ingredients[edit | edit source]
- 2 rib eye steaks
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 tablespoon rosemary, chopped
- 1 tablespoon thyme, chopped
- 2 cups mixed vegetables (such as broccoli, bell peppers, zucchini, and carrots)
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Season the rib eye steaks with salt, pepper, minced garlic, chopped rosemary, and thyme.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the steaks and sear on both sides until browned, about 3 minutes per side.
- Remove the steaks from the skillet and set aside. In the same skillet, add the mixed vegetables and toss to coat in the remaining oil and seasonings.
- Place the skillet in the preheated oven and roast for 15-20 minutes, or until the vegetables are tender and the steaks are cooked to your desired level of doneness.
- Remove from the oven and let the steaks rest for a few minutes before serving.
