Keto Rib Eye Steak with Oven Roasted Vegetables[edit | edit source]

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Season the rib eye steaks with salt, pepper, minced garlic, chopped rosemary, and thyme.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the steaks and sear on both sides until browned, about 3 minutes per side.
  4. Remove the steaks from the skillet and set aside. In the same skillet, add the mixed vegetables and toss to coat in the remaining oil and seasonings.
  5. Place the skillet in the preheated oven and roast for 15-20 minutes, or until the vegetables are tender and the steaks are cooked to your desired level of doneness.
  6. Remove from the oven and let the steaks rest for a few minutes before serving.
