Keto Shrimp with Spaghetti Squash[edit | edit source]
Ingredients[edit | edit source]
- 1 medium spaghetti squash
- 2 tablespoons olive oil
- 1 pound shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 1/4 cup parsley, chopped
- 1/4 cup parmesan cheese, grated
Instructions[edit | edit source]
- Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with one tablespoon of olive oil and season with salt and pepper. Place the squash cut side down on a baking sheet and roast for about 40 minutes, or until the squash is tender.
- While the squash is roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the shrimp, garlic, and red pepper flakes (if using). Cook until the shrimp are pink and cooked through, about 5 minutes. Season with salt and pepper.
- Once the spaghetti squash is done, use a fork to scrape out the flesh into spaghetti-like strands. Add the cooked shrimp and garlic mixture to the squash and toss to combine. Top with chopped parsley and grated parmesan cheese before serving.
