This is a recipe for a delicious and healthy Keto Spring Veggie and Goat Cheese Omelet. This dish is perfect for those following a ketogenic diet, as it is low in carbs and high in healthy fats and proteins.
Ingredients[edit | edit source]
- 3 large eggs
- 1/4 cup goat cheese, crumbled
- 1/2 cup mixed spring vegetables (such as asparagus, spinach, and bell peppers)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions[edit | edit source]
- Heat the olive oil in a non-stick skillet over medium heat.
- Add the spring vegetables to the skillet and sauté until they are tender, about 5 minutes.
- In a separate bowl, whisk the eggs until they are well beaten. Season with salt and pepper.
- Pour the beaten eggs over the vegetables in the skillet. Cook until the eggs are set, about 3-4 minutes.
