- 4 medium zucchini
- 1 lb ground beef
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1/2 cup bell pepper, diced
- 1 cup tomatoes, diced
- 1 cup cheddar cheese, shredded
- 1/2 cup sour cream
- 1/4 cup cilantro, chopped

- Preheat your oven to 400 degrees F (200 degrees C).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create a boat.
- In a large skillet, cook the ground beef, onion, garlic, and bell pepper over medium heat until the beef is browned and the vegetables are tender.
- Add the tomatoes to the skillet and season with salt and pepper. Cook for another 2-3 minutes.
- Fill each zucchini boat with the beef mixture and top with shredded cheese.
