Keto Tuna Salad Poached Eggs is a delicious and nutritious meal that is perfect for those following a keto diet. This recipe is easy to prepare and packed with protein and healthy fats.
Ingredients[edit | edit source]
- 2 cans of tuna
- 4 eggs
- 1/4 cup of mayonnaise
- 1/4 cup of celery, finely chopped
- 1/4 cup of red onion, finely chopped
- 1 tablespoon of Dijon mustard
- 1 tablespoon of lemon juice
- Salt and pepper to taste
- 2 tablespoons of vinegar (for poaching eggs)
- Fresh parsley for garnish
Instructions[edit | edit source]
- Drain the tuna and place it in a large bowl.
- Add the mayonnaise, celery, red onion, Dijon mustard, lemon juice, salt, and pepper to the bowl. Mix well to combine.
- Bring a pot of water to a simmer and add the vinegar.
- Crack each egg into a small bowl and then gently slide it into the simmering water.
- Poach the eggs for about 4 minutes, or until the whites are set but the yolks are still runny.
- Use a slotted spoon to remove the eggs from the water and drain on a paper towel.
- Divide the tuna salad among four plates and top each with a poached egg.
- Garnish with fresh parsley and serve.
