This is a delicious and healthy recipe for Keto Zucchini Fries with Spicy Tomato Mayo. It's a perfect snack or side dish for those following a keto diet.

- 2 medium zucchinis, cut into fries
- 1/2 cup almond flour
- 1/2 cup Parmesan cheese, grated
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- 1/2 cup mayonnaise
- 2 tablespoons tomato paste
- 1/2 teaspoon cayenne pepper

- Preheat your oven to 425 degrees F (220 degrees C) and line a baking sheet with parchment paper.
- In a shallow dish, combine the almond flour, Parmesan cheese, paprika, garlic powder, salt, and pepper.
- Dip each zucchini fry into the beaten eggs, then coat in the almond flour mixture. Place on the prepared baking sheet.
- Bake for 15-20 minutes, or until golden brown and crispy.
- While the zucchini fries are baking, prepare the spicy tomato mayo. In a small bowl, combine the mayonnaise, tomato paste, and cayenne pepper. Stir until well combined.
- Serve the zucchini fries hot with the spicy tomato mayo for dipping.
