A delicious and healthy keto friendly recipe, the Loaded Cauliflower Salad is a perfect side dish or a light meal. It's packed with flavors and nutrients, making it a great choice for those on a low-carb diet.
Ingredients[edit | edit source]
- 1 large cauliflower, cut into florets
- 1 cup cheddar cheese, shredded
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup green onions, chopped
- 1/2 cup bacon, cooked and crumbled
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Place the cauliflower florets on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned.
- In a large bowl, combine the mayonnaise, sour cream, half of the green onions, half of the bacon, and half of the cheese. Mix well.
- Add the roasted cauliflower to the bowl and toss to coat with the dressing.
- Season with salt and pepper to taste.
- Top with the remaining green onions, bacon, and cheese.
- Serve immediately or refrigerate for an hour before serving to allow the flavors to meld together.
