Low Carb Chocolate Cake with Easter Eggs[edit | edit source]
Ingredients[edit | edit source]
- Almond flour - 2 cups
- Cocoa powder - 3/4 cup
- Baking powder - 1 tsp
- Salt - 1/2 tsp
- Unsalted butter - 1/2 cup
- Erythritol - 1 cup
- Eggs - 4 large
- Vanilla extract - 2 tsp
- Almond milk - 1/2 cup
- Dark chocolate - 100g
- Easter eggs (sugar-free) - for decoration
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line it with parchment paper.
- In a medium bowl, combine the almond flour, cocoa powder, baking powder, and salt. Set aside.
- In a large bowl, cream the unsalted butter and erythritol together until light and fluffy.
- Beat in the eggs, one at a time, then stir in the vanilla extract.
- Gradually mix in the almond flour mixture alternately with the almond milk.
- Pour the batter into the prepared cake pan.
- Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Melt the dark chocolate and drizzle over the cooled cake. Decorate with sugar-free Easter eggs.
