Low Carb Eggnog is a delicious, creamy, and festive drink that is perfect for the holiday season. This recipe is keto-friendly, meaning it is low in carbs and high in fats, making it suitable for those following a ketogenic diet.
Ingredients[edit | edit source]
- 2 cups of Almond Milk
- 1 cup of Heavy Cream
- 4 Egg Yolks
- 1/4 cup of Erythritol
- 1 teaspoon of Vanilla Extract
- 1/2 teaspoon of Nutmeg
- 1/4 teaspoon of Cinnamon
- Optional: 1/4 cup of Rum or Bourbon
Instructions[edit | edit source]
- In a medium saucepan, combine the almond milk and heavy cream. Heat over medium heat until it begins to steam, but do not let it boil.
- In a separate bowl, whisk together the egg yolks and erythritol until well combined.
- Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly to prevent the eggs from scrambling.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
- Remove from heat and stir in the vanilla extract, nutmeg, and cinnamon. If desired, stir in the rum or bourbon.
- Chill in the refrigerator for at least 2 hours before serving.
