A delicious and healthy alternative to traditional holiday bread, this Low Carb Holiday Bread is perfect for those following a keto diet. It's packed with flavor and has a great texture that's both moist and slightly crumbly.
Ingredients[edit | edit source]
- 2 cups of almond flour
- 1/2 cup of coconut flour
- 1/2 cup of erythritol
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 4 large eggs
- 1/2 cup of unsalted butter, melted
- 1/4 cup of almond milk
- 1 teaspoon of vanilla extract
- 1/2 cup of pecans, chopped
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a large bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt.
- In a separate bowl, whisk together the eggs, melted butter, almond milk, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
- Fold in the chopped pecans.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
