This is a delicious and hearty keto friendly recipe for a Low Carb Indian Lamb Stew. It's packed with flavors from various spices and herbs, making it a perfect comfort food for those on a ketogenic diet.
Ingredients[edit | edit source]
- 500g lamb shoulder, cut into chunks
- 2 tbsp coconut oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp grated fresh ginger
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp cayenne pepper
- 1 can tomatoes, diced
- 500ml beef broth
- Salt and pepper to taste
- Fresh coriander leaves for garnish
Instructions[edit | edit source]
- Heat the coconut oil in a large pot over medium heat. Add the lamb chunks and brown on all sides. Remove the lamb and set aside.
- In the same pot, add the onion, garlic, and ginger. Cook until the onion is translucent.
- Add the turmeric, cumin, coriander, and cayenne pepper. Stir well to combine with the onion mixture.
- Return the lamb to the pot and add the diced tomatoes, beef broth, salt, and pepper. Bring to a boil, then reduce the heat to low, cover the pot, and simmer for about 2 hours, or until the lamb is tender.
- Garnish with fresh coriander leaves before serving.
