Low Carb Pasta a la Carbonara is a delicious and healthy alternative to traditional pasta dishes. This recipe is perfect for those following a keto diet, as it is low in carbs and high in protein and healthy fats.
Ingredients[edit | edit source]
- 2 cups of shirataki noodles
- 2 large eggs
- 1 cup of Parmesan cheese, grated
- 4 slices of bacon, chopped
- 2 cloves of garlic, minced
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions[edit | edit source]
- Rinse the shirataki noodles under cold water and drain well.
- In a large bowl, whisk together the eggs and Parmesan cheese. Set aside.
- In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside.
- In the same skillet, add the minced garlic and cook until fragrant.
- Add the drained shirataki noodles to the skillet and toss to combine with the garlic.
- Remove the skillet from the heat and slowly pour in the egg and cheese mixture, stirring constantly to create a creamy sauce.
- Add the cooked bacon to the skillet and season with salt and black pepper.
- Garnish with fresh parsley before serving.
