This is a recipe for a delicious, creamy, and keto-friendly No Bake Egg Free Flan. It's perfect for those on a keto diet who are also avoiding eggs.

  1. In a medium saucepan, combine the almond milk, erythritol, and vanilla extract. Bring to a simmer over medium heat.
  2. Sprinkle the xanthan gum over the mixture, whisking constantly to prevent lumps. Continue to cook for 2-3 minutes until the mixture thickens.
  3. In a small bowl, sprinkle the gelatin over the water and let it sit for a few minutes to soften.
  4. Add the softened gelatin to the saucepan and whisk until fully dissolved.
  5. Remove the saucepan from the heat and stir in the heavy cream.
  6. Pour the mixture into individual ramekins or a flan mold. Refrigerate for at least 2 hours, or until set.
  7. To serve, invert the flan onto a plate and enjoy!
