No Bake Egg Free Keto Flan[edit]
This is a recipe for a delicious, creamy, and keto-friendly No Bake Egg Free Flan. It's perfect for those on a keto diet who are also avoiding eggs.
Ingredients[edit]
- 1 cup of Almond Milk
- 1/4 cup of Erythritol
- 1/2 teaspoon of Vanilla Extract
- 1/4 teaspoon of Xanthan Gum
- 1/2 cup of Heavy Cream
- 1/4 cup of Unflavored Gelatin
- 1/4 cup of water
Instructions[edit]
- In a medium saucepan, combine the almond milk, erythritol, and vanilla extract. Bring to a simmer over medium heat.
- Sprinkle the xanthan gum over the mixture, whisking constantly to prevent lumps. Continue to cook for 2-3 minutes until the mixture thickens.
- In a small bowl, sprinkle the gelatin over the water and let it sit for a few minutes to soften.
- Add the softened gelatin to the saucepan and whisk until fully dissolved.
- Remove the saucepan from the heat and stir in the heavy cream.
- Pour the mixture into individual ramekins or a flan mold. Refrigerate for at least 2 hours, or until set.
- To serve, invert the flan onto a plate and enjoy!
