Pickled red onions are a delicious and versatile keto-friendly condiment that can be used to enhance the flavor of many dishes. They are easy to prepare and can be stored in the refrigerator for up to two weeks.
Ingredients[edit | edit source]
- 2 large red onions, thinly sliced
- 1 cup apple cider vinegar
- 1 tablespoon salt
- 2 tablespoons erythritol or other keto-friendly sweetener
- 1 cup water
Instructions[edit | edit source]
- Begin by peeling and thinly slicing the red onions. Set them aside.
- In a medium saucepan, combine the apple cider vinegar, salt, erythritol, and water. Bring the mixture to a boil over medium heat.
- Once the mixture is boiling, add the sliced onions. Stir well to ensure all the onions are submerged in the liquid.
- Reduce the heat to low and simmer the onions for about 10 minutes, or until they are soft and have a pink color.
- Remove the saucepan from the heat and let the onions cool in the liquid. Once cooled, transfer the onions and liquid to a glass jar.
- Store the pickled onions in the refrigerator. They will be ready to eat after 24 hours and can be stored for up to two weeks.
