Sausage stroganoff cauliflower parsley rice
Sausage Stroganoff with Cauliflower Parsley Rice[edit | edit source]
Ingredients[edit | edit source]
- 4 sausages
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup of mushrooms, sliced
- 1 cup of sour cream
- 1 tablespoon of Dijon mustard
- Salt and pepper to taste
- 1 head of cauliflower
- 1 bunch of parsley, finely chopped
- 2 tablespoons of olive oil
Instructions[edit | edit source]
- In a large pan, cook the sausages until browned and set aside.
- In the same pan, add the onion, garlic, and mushrooms. Cook until the onions are translucent and the mushrooms are browned.
- Add the sour cream and Dijon mustard to the pan. Stir until well combined and season with salt and pepper.
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
- In a separate pan, heat the olive oil and add the cauliflower rice. Cook for 5-7 minutes until tender.
- Add the parsley to the cauliflower rice and stir until well combined.
- Slice the sausages and add them to the stroganoff sauce. Stir until well combined.
- Serve the sausage stroganoff over the cauliflower parsley rice.
