This is a delicious and easy-to-make keto friendly recipe for a Slow Cooker Mocha Pudding Cake. It's a perfect dessert for those who are following a ketogenic diet.
Ingredients[edit | edit source]
- 1 cup of Almond Flour
- 1/2 cup of Cocoa Powder
- 1/2 cup of Erythritol
- 2 teaspoons of Baking Powder
- 1/4 teaspoon of Salt
- 3/4 cup of Unsweetened Almond Milk
- 1/4 cup of Melted Butter
- 1 teaspoon of Vanilla Extract
- 1/2 cup of Brewed Coffee
- 1/2 cup of Water

- In a large bowl, combine the almond flour, cocoa powder, erythritol, baking powder, and salt.
- In another bowl, mix together the almond milk, melted butter, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
- Pour the mixture into the slow cooker.
- In a small saucepan, heat the brewed coffee and water until hot but not boiling.
- Slowly pour the hot coffee mixture over the batter in the slow cooker.
- Cover and cook on high for 2-3 hours, or until the cake is set and the top is slightly dry.
- Serve warm with a dollop of whipped cream, if desired.
