Spicy Jalapeno Poppers are a delicious and satisfying snack that are perfect for those following a keto diet. They are packed with flavor and provide a good amount of healthy fats and protein.
Ingredients[edit | edit source]
- 12 fresh jalapeno peppers
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup bacon, cooked and crumbled
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/2 cup almond flour
- 2 eggs
- 1 cup pork rinds, crushed
Instructions[edit | edit source]
- Preheat your oven to 375 degrees F (190 degrees C).
- Cut the jalapenos in half lengthwise and remove the seeds and membranes.
- In a bowl, mix together the cream cheese, cheddar cheese, bacon, garlic powder, onion powder, salt, and pepper.
- Fill each jalapeno half with the cheese mixture.
- In a separate bowl, beat the eggs. In another bowl, mix together the almond flour and crushed pork rinds.
- Dip each stuffed jalapeno in the egg, then roll in the almond flour mixture.
- Place the jalapenos on a baking sheet and bake for 20-25 minutes, until golden and crispy.
