Strawberry Swirl Ice Cream[edit | edit source]
This is a delicious, keto-friendly recipe for Strawberry Swirl Ice Cream. It's a perfect treat for those hot summer days or whenever you're in the mood for a sweet treat.
Ingredients[edit | edit source]
- 2 cups of Heavy Cream
- 1 cup of Almond Milk
- 1/2 cup of Erythritol
- 1 tsp of Vanilla Extract
- 1 cup of fresh Strawberries
- 1/4 cup of Water
- 1/4 cup of Erythritol (for the strawberry swirl)
Instructions[edit | edit source]
- In a medium saucepan, combine the heavy cream, almond milk, and 1/2 cup of erythritol. Heat over medium heat until the erythritol is fully dissolved.
- Remove from heat and stir in the vanilla extract. Allow the mixture to cool.
- While the mixture is cooling, make the strawberry swirl. In a small saucepan, combine the strawberries, water, and 1/4 cup of erythritol. Heat over medium heat until the strawberries are soft and the erythritol is fully dissolved.
- Use a blender or food processor to puree the strawberry mixture until smooth. Allow it to cool.
- Once both mixtures are cool, pour the cream mixture into an ice cream maker and churn according to the manufacturer's instructions.
- When the ice cream is almost done churning, slowly pour in the strawberry swirl.
- Transfer the ice cream to a lidded container and freeze for at least 2 hours before serving.
