Thai Chicken Zoodles[edit | edit source]

  1. Heat the coconut oil in a large skillet over medium heat.
  2. Add the chicken breasts and season with salt and pepper. Cook until no longer pink in the middle, about 6-8 minutes per side. Remove from the skillet and set aside.
  3. In the same skillet, add the garlic, red bell pepper, and carrot. Cook until the vegetables are tender, about 5 minutes.
  4. While the vegetables are cooking, slice the chicken into thin strips.
  5. Add the chicken back into the skillet along with the zucchini noodles, coconut aminos, fish sauce, lime juice, and red pepper flakes. Stir to combine and cook until the zucchini noodles are tender, about 3-4 minutes.
  6. Serve the Thai chicken zoodles garnished with cilantro and lime wedges.
