Thai Style Low Carb Peanut Chicken[edit | edit source]
This is a delicious and healthy recipe for Thai Style Low Carb Peanut Chicken. It's perfect for those following a keto diet as it's low in carbs and high in protein and healthy fats.
Ingredients[edit | edit source]
- 4 chicken breasts, boneless and skinless
- 2 tablespoons coconut oil
- 1/2 cup peanut butter, unsweetened
- 1/4 cup soy sauce, low sodium
- 1/4 cup chicken broth
- 2 tablespoons erythritol or other keto-friendly sweetener
- 1 tablespoon lime juice
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- 2 tablespoons cilantro, chopped (for garnish)
- 2 tablespoons peanuts, chopped (for garnish)
Instructions[edit | edit source]
- Season the chicken breasts with salt and pepper.
- Heat the coconut oil in a large skillet over medium heat.
- Add the chicken to the skillet and cook until golden brown and cooked through, about 6-8 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the peanut butter, soy sauce, chicken broth, erythritol, lime juice, garlic, ginger, and red pepper flakes. Stir until well combined and heated through.
- Return the chicken to the skillet and coat with the peanut sauce.
- Garnish with chopped cilantro and peanuts before serving.
