Cuban picadillo
Cuban picadillo is a low carbohydrate / keto friendly food item.
Overview[edit | edit source]
Cuban Picadillo is a traditional Cuban dish made with ground beef and a flavorful combination of olives, capers, and raisins. It's a sweet and tangy dish that can be served over cauliflower rice for those on a ketogenic diet.
Recipe[edit | edit source]
Ingredients[edit | edit source]
- 1 lb ground beef
- 1 onion, finely chopped
- 1 bell pepper, finely chopped
- 3 cloves garlic, minced
- 1/2 cup green olives, sliced
- 2 tablespoons capers
- 1/4 cup raisins (can be omitted for stricter keto)
- 1 can (8 oz) tomato sauce
- 1/4 cup white wine (optional)
- 2 teaspoons cumin
- 1 teaspoon oregano
- Salt and pepper to taste
Preparation[edit | edit source]
- In a large skillet, brown the ground beef over medium heat. Break it apart as it cooks.
- Add the onions, bell pepper, and garlic to the skillet. Cook until the vegetables are soft.
- Stir in the olives, capers, raisins, tomato sauce, and white wine (if using). Season with cumin, oregano, salt, and pepper.
- Let the mixture simmer for about 20 minutes or until the flavors meld together.
- Adjust seasoning if needed, and serve hot.
Serving Suggestions[edit | edit source]
- Serve over cauliflower rice or zucchini noodles for a keto-friendly option.
- Can also be used as a filling for keto tortillas or lettuce wraps.
Nutritional Information[edit | edit source]
- Please note that adding raisins will increase the carb count. Consider omitting them for a stricter keto approach.
