Cuban Roast Pork (Lechon Asado) is a traditional Cuban dish that is also keto-friendly. This recipe serves 6 people.

  1. In a large bowl, combine the orange juice, lime juice, lemon juice, minced garlic, dried oregano, ground cumin, salt, and black pepper. Stir until well mixed.
  2. Add the pork shoulder to the marinade, making sure it is fully submerged. Cover and refrigerate for at least 8 hours, or overnight.
  3. Preheat your oven to 325°F (165°C).
  4. Remove the pork from the marinade, reserving the marinade for later use. Pat the pork dry with paper towels.
  5. Heat the olive oil in a large oven-safe pot over medium-high heat. Add the pork and sear on all sides until browned.
  6. Pour the reserved marinade over the pork. Add the sliced onion and green bell pepper.
  7. Cover the pot and transfer it to the preheated oven. Roast for about 4 hours, or until the pork is tender and can be easily pulled apart with a fork.
  8. Let the pork rest for a few minutes before slicing. Serve with the onions and peppers from the pot.
