Cuban Roast Pork (Lechon Asado)[edit]
Cuban Roast Pork (Lechon Asado) is a traditional Cuban dish that is also keto-friendly. This recipe serves 6 people.
Ingredients[edit]
- 4 lbs pork shoulder
- 1 cup orange juice (sugar-free)
- 1/2 cup lime juice
- 1/2 cup lemon juice
- 8 cloves garlic, minced
- 2 teaspoons dried oregano
- 2 teaspoons ground cumin
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 onion, sliced
- 1 green bell pepper, sliced
Instructions[edit]
- In a large bowl, combine the orange juice, lime juice, lemon juice, minced garlic, dried oregano, ground cumin, salt, and black pepper. Stir until well mixed.
- Add the pork shoulder to the marinade, making sure it is fully submerged. Cover and refrigerate for at least 8 hours, or overnight.
- Preheat your oven to 325°F (165°C).
- Remove the pork from the marinade, reserving the marinade for later use. Pat the pork dry with paper towels.
- Heat the olive oil in a large oven-safe pot over medium-high heat. Add the pork and sear on all sides until browned.
- Pour the reserved marinade over the pork. Add the sliced onion and green bell pepper.
- Cover the pot and transfer it to the preheated oven. Roast for about 4 hours, or until the pork is tender and can be easily pulled apart with a fork.
- Let the pork rest for a few minutes before slicing. Serve with the onions and peppers from the pot.
