Eggplant Roll Ups with Chicken, Tomato, and Butter[edit | edit source]

This is a delicious and healthy keto friendly recipe for Eggplant Roll Ups with Chicken, Tomato, and Butter.

Instructions[edit | edit source]

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Slice the eggplants lengthwise into thin slices.
  3. Season the chicken breasts with salt and pepper and cook them in a pan with 2 tablespoons of butter until they are fully cooked.
  4. Once the chicken is cooked, shred it and set it aside.
  5. In the same pan, add the tomato sauce and let it simmer for a few minutes.
  6. Lay out the eggplant slices and place a spoonful of the shredded chicken and tomato sauce on one end of each slice.
  7. Roll up the eggplant slices and place them in a baking dish.
  8. Dot the top of the eggplant roll ups with the remaining butter.
  9. Bake in the oven for 20-25 minutes or until the eggplant is tender and the tops are slightly browned.
  10. Garnish with fresh basil leaves before serving.
