Eggplant Roll Ups with Chicken, Tomato, and Butter[edit | edit source]
This is a delicious and healthy keto friendly recipe for Eggplant Roll Ups with Chicken, Tomato, and Butter.
Ingredients[edit | edit source]
- 2 large eggplant
- 2 chicken breasts
- 1 cup of tomato sauce
- 4 tablespoons of butter
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions[edit | edit source]
- Preheat your oven to 375 degrees Fahrenheit.
- Slice the eggplants lengthwise into thin slices.
- Season the chicken breasts with salt and pepper and cook them in a pan with 2 tablespoons of butter until they are fully cooked.
- Once the chicken is cooked, shred it and set it aside.
- In the same pan, add the tomato sauce and let it simmer for a few minutes.
- Lay out the eggplant slices and place a spoonful of the shredded chicken and tomato sauce on one end of each slice.
- Roll up the eggplant slices and place them in a baking dish.
- Dot the top of the eggplant roll ups with the remaining butter.
- Bake in the oven for 20-25 minutes or until the eggplant is tender and the tops are slightly browned.
- Garnish with fresh basil leaves before serving.
