French Onion Soup (Keto-Friendly)

  1. In a large pot, melt the butter with the olive oil over medium heat. Add the onions, garlic, salt, and pepper. Cook until onions are caramelized, about 25 minutes.
  2. Add the red wine (if using), increase the heat to high and bring to a boil. Reduce the heat to medium and simmer until the wine has evaporated and the onions are dry.
  3. Add the beef broth, Worcestershire sauce, thyme, and bay leaves. Bring the soup back to a simmer, and cook for 10 minutes.
  4. Preheat the oven broiler. Ladle the soup into oven-safe bowls. Top each with a generous amount of cheese. Place bowls on a baking sheet and broil until cheese is bubbly and golden brown, about 3-5 minutes.
