French onion soup
French Onion Soup (Keto-Friendly)[edit | edit source]

Ingredients[edit | edit source]
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup red wine (optional)
- 8 cups beef broth
- 2 tablespoons Worcestershire sauce
- 2 cups shredded Gruyère cheese
- Thyme and bay leaves for seasoning
Instructions[edit | edit source]
- In a large pot, melt the butter with the olive oil over medium heat. Add the onions, garlic, salt, and pepper. Cook until onions are caramelized, about 25 minutes.
- Add the red wine (if using), increase the heat to high and bring to a boil. Reduce the heat to medium and simmer until the wine has evaporated and the onions are dry.
- Add the beef broth, Worcestershire sauce, thyme, and bay leaves. Bring the soup back to a simmer, and cook for 10 minutes.
- Preheat the oven broiler. Ladle the soup into oven-safe bowls. Top each with a generous amount of cheese. Place bowls on a baking sheet and broil until cheese is bubbly and golden brown, about 3-5 minutes.
