Gingerbread Creme Brulee is a delicious, keto-friendly dessert that combines the rich, creamy texture of creme brulee with the warm, spicy flavors of gingerbread. This recipe is perfect for those following a keto diet, as it is low in carbs and high in fat.

  1. Preheat your oven to 325 degrees Fahrenheit.
  2. In a medium saucepan, combine the heavy cream, erythritol, and vanilla extract. Heat over medium heat until it begins to simmer.
  3. In a separate bowl, whisk together the egg yolks, ground ginger, ground cinnamon, ground cloves, and ground nutmeg.
  4. Slowly pour the heated cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from scrambling.
  5. Pour the mixture into four ramekins and place them in a baking dish. Fill the baking dish with boiling water until it reaches halfway up the sides of the ramekins.
  6. Bake for 40-45 minutes, or until the creme brulee is set but still slightly jiggly in the center.
  7. Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours before serving.
  8. Before serving, sprinkle a thin layer of erythritol over the top of each creme brulee and use a kitchen torch to caramelize the sugar.
