This is a delicious and healthy recipe for Golden Low Carb Granola. It's perfect for those following a keto diet as it's low in carbs and high in healthy fats.
Ingredients[edit | edit source]
- 2 cups of almonds
- 1 cup of pecans
- 1 cup of walnuts
- 1/2 cup of flax seeds
- 1/2 cup of pumpkin seeds
- 1/2 cup of sunflower seeds
- 1/2 cup of coconut flakes
- 1/4 cup of coconut oil
- 1/4 cup of honey or stevia for a lower carb option
- 1 tsp of vanilla extract
- 1 tsp of cinnamon
- 1/2 tsp of salt
Instructions[edit | edit source]
- Preheat your oven to 300°F (150°C).
- In a large bowl, combine the almonds, pecans, walnuts, flax seeds, pumpkin seeds, sunflower seeds, and coconut flakes.
- In a small saucepan, melt the coconut oil and honey (or stevia) together. Remove from heat and stir in the vanilla extract, cinnamon, and salt.
- Pour the liquid mixture over the nut and seed mixture and stir until everything is well coated.
- Spread the granola out on a large baking sheet lined with parchment paper.
- Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown.
- Let the granola cool completely on the baking sheet. It will become crunchier as it cools.
