Gooey Keto Cinnamon Rolls[edit | edit source]

- Dough
- 2 cups Almond Flour
- 1/4 cup Coconut Flour
- 1 teaspoon Xanthan Gum
- 1/2 teaspoon Baking Powder
- 1/4 teaspoon Salt
- 2 tablespoons Unsalted Butter
- 1/2 cup Water
- 1 large Egg
- Filling
- 1/2 cup Brown Erythritol
- 2 tablespoons Cinnamon
- 2 tablespoons Unsalted Butter
- Cream Cheese Frosting
- 4 ounces Cream Cheese
- 2 tablespoons Unsalted Butter
- 1/4 cup Powdered Erythritol
- 1/2 teaspoon Vanilla Extract
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the almond flour, coconut flour, xanthan gum, baking powder, and salt.
- In a small saucepan, melt the butter over medium heat. Add the water and bring to a boil.
- Pour the hot butter mixture into the dry ingredients and stir until a dough forms.
- Add the egg to the dough and mix until fully incorporated.
- Roll out the dough between two pieces of parchment paper into a rectangle.
- Spread the filling mixture evenly over the dough.
- Starting from one end, roll the dough tightly into a log.
- Cut the log into 8 equal pieces and place them on the prepared baking sheet.
- Bake for 20-25 minutes, or until golden brown.
- While the rolls are baking, prepare the cream cheese frosting.
- Spread the frosting over the warm rolls before serving.
