This is a delicious and hearty keto friendly recipe for Harvest Pumpkin and Sausage Soup. It's perfect for those chilly autumn evenings and is sure to satisfy your taste buds.
Ingredients[edit | edit source]
- 1 lb sausage
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup pumpkin puree
- 4 cups chicken broth
- 1/2 cup heavy cream
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper (optional)
- Parsley for garnish
Instructions[edit | edit source]
- In a large pot, cook the sausage over medium heat until browned. Remove the sausage from the pot and set aside.
- In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent.
- Add the pumpkin puree, chicken broth, heavy cream, paprika, salt, black pepper, and cayenne pepper to the pot. Stir to combine.
- Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
- Add the cooked sausage back into the pot and stir to combine.
- Let the soup simmer for an additional 10 minutes.
- Serve hot, garnished with parsley.
