This is a recipe for Keto Argentine Cookie and Caramel Sandwiches. These delicious treats are perfect for those following a Keto diet.

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the almond flour, coconut flour, and erythritol.
  3. Melt the butter and add it to the flour mixture along with the egg and vanilla extract. Mix until a dough forms.
  4. Roll out the dough between two pieces of parchment paper until it's about 1/4 inch thick.
  5. Using a round cookie cutter, cut out the cookies and place them on a baking sheet lined with parchment paper.
  6. Bake for 10-12 minutes or until the edges are golden brown. Allow the cookies to cool completely.
  7. Once the cookies are cooled, spread a layer of sugar-free caramel sauce on one cookie and then top it with another cookie to form a sandwich. Repeat with the remaining cookies.
  8. Roll the edges of the cookie sandwiches in the unsweetened shredded coconut.
