This is a delicious and nutritious recipe for a Keto Bacon Mushroom Breakfast Casserole. It's a perfect dish for those following a keto diet as it's low in carbs and high in fats.

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and set aside.
  3. In the same skillet, sauté the mushrooms and onions until they are soft.
  4. Add the spinach to the skillet and cook until wilted.
  5. In a large bowl, whisk together the eggs, heavy cream, salt, and pepper.
  6. Crumble the cooked bacon and add it to the egg mixture along with the sautéed vegetables and shredded cheese.
  7. Pour the mixture into a greased casserole dish.
  8. Bake for 30-35 minutes or until the eggs are set and the top is golden brown.
