Keto Bacon Wrapped Chicken Breast with Cauliflower Puree[edit | edit source]
Ingredients[edit | edit source]
- 2 chicken breasts
- 8 slices of bacon
- 1 head of cauliflower
- 2 tablespoons of butter
- Salt and pepper to taste
- 1 tablespoon of olive oil
- 1/2 cup of chicken broth
- 1/2 cup of heavy cream
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Wrap each chicken breast with 4 slices of bacon. Secure with toothpicks if necessary.
- Heat the olive oil in a large oven-safe skillet over medium heat. Add the bacon-wrapped chicken breasts and cook until the bacon is crispy, about 5 minutes per side.
- Transfer the skillet to the preheated oven and bake until the chicken is no longer pink in the center, about 15 minutes.
- While the chicken is baking, cut the cauliflower into florets and steam until tender, about 10 minutes.
- Transfer the steamed cauliflower to a food processor. Add the butter, chicken broth, and heavy cream. Process until smooth. Season with salt and pepper to taste.
- Serve the bacon-wrapped chicken breasts on a bed of cauliflower puree.
