Keto Bacon Wrapped Chicken Breast with Cauliflower Puree[edit | edit source]

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Wrap each chicken breast with 4 slices of bacon. Secure with toothpicks if necessary.
  3. Heat the olive oil in a large oven-safe skillet over medium heat. Add the bacon-wrapped chicken breasts and cook until the bacon is crispy, about 5 minutes per side.
  4. Transfer the skillet to the preheated oven and bake until the chicken is no longer pink in the center, about 15 minutes.
  5. While the chicken is baking, cut the cauliflower into florets and steam until tender, about 10 minutes.
  6. Transfer the steamed cauliflower to a food processor. Add the butter, chicken broth, and heavy cream. Process until smooth. Season with salt and pepper to taste.
  7. Serve the bacon-wrapped chicken breasts on a bed of cauliflower puree.
