Keto Chicken Zoodle al Limone is a delicious, low-carb dish that is perfect for those following a keto diet. This recipe is packed with flavor and is sure to satisfy your taste buds.
Ingredients[edit | edit source]
- 2 chicken breasts, boneless and skinless
- 2 zucchini, spiralized into noodles
- 1 lemon, juiced and zested
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1/4 cup of Parmesan cheese, grated
- 1 tablespoon of parsley, chopped
Instructions[edit | edit source]
- Season the chicken breasts with salt and pepper.
- Heat 1 tablespoon of olive oil in a pan over medium heat.
- Add the chicken to the pan and cook until golden brown and cooked through, about 5-7 minutes on each side. Remove the chicken from the pan and set aside.
- In the same pan, add the remaining olive oil and garlic. Cook until the garlic is fragrant, about 1 minute.
- Add the zucchini noodles to the pan and cook until tender, about 3-4 minutes.
- Add the lemon juice and zest to the pan and toss to combine.
- Slice the cooked chicken and add it to the pan. Toss to combine.
- Sprinkle the Parmesan cheese and parsley over the top of the dish. Serve immediately.
