Keto Christmas Cupcakes with Orange Frosting[edit | edit source]
Ingredients[edit | edit source]
- 1 cup almond flour
- 1/2 cup erythritol
- 1 tsp baking powder
- 3 large eggs
- 1/2 cup melted butter
- 1 tsp vanilla extract
- Zest of 1 orange
- 1/2 cup cream cheese
- 1/4 cup heavy cream
- 1 tsp orange extract
Instructions[edit | edit source]
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, combine the almond flour, erythritol, and baking powder.
- In another bowl, whisk together the eggs, melted butter, vanilla extract, and orange zest.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the batter evenly among the cupcake liners and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- While the cupcakes are cooling, prepare the frosting. In a medium bowl, beat together the cream cheese, heavy cream, and orange extract until smooth.
- Once the cupcakes are completely cooled, frost them with the orange cream cheese frosting.
