Keto Christmas Cupcakes with Orange Frosting[edit | edit source]

Ingredients[edit | edit source]

Instructions[edit | edit source]

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, combine the almond flour, erythritol, and baking powder.
  3. In another bowl, whisk together the eggs, melted butter, vanilla extract, and orange zest.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the batter evenly among the cupcake liners and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cupcakes are cooling, prepare the frosting. In a medium bowl, beat together the cream cheese, heavy cream, and orange extract until smooth.
  7. Once the cupcakes are completely cooled, frost them with the orange cream cheese frosting.
