Keto Crispy Chicken with Creamy Dijon Lemon Dressing[edit | edit source]
Ingredients[edit | edit source]
- 4 Chicken Breasts
- 1 cup Almond Flour
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Paprika
- 2 Eggs
- 1/4 cup Olive Oil
For the Creamy Dijon Lemon Dressing[edit | edit source]
- 1/2 cup Mayonnaise
- 2 tbsp Dijon Mustard
- 1 tbsp Lemon Juice
- 1 clove Garlic, minced
- Salt and Black Pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 400°F (200°C).
- In a shallow dish, combine the almond flour, salt, black pepper, garlic powder, onion powder, and paprika.
- In another dish, beat the eggs.
- Dip each chicken breast into the egg, then coat in the almond flour mixture.
- Heat the olive oil in a large oven-safe skillet over medium heat.
- Add the chicken to the skillet and cook until golden brown on each side, about 3-5 minutes per side.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
- While the chicken is baking, prepare the dressing by combining the mayonnaise, Dijon mustard, lemon juice, minced garlic, salt, and pepper in a small bowl.
- Drizzle the dressing over the baked chicken before serving.
