For the Gnocchi[edit | edit source]
- 1 cup of cauliflower rice
- 1 cup of almond flour
- 1 egg
- 1/2 cup of Parmesan cheese, grated
- Salt and pepper to taste
For the Basil Pesto[edit | edit source]
- 2 cups of fresh basil leaves
- 1/2 cup of olive oil
- 1/3 cup of pine nuts
- 2 cloves of garlic
- Salt and pepper to taste
Instructions[edit | edit source]
- Start by making the gnocchi. Combine the cauliflower rice, almond flour, egg, Parmesan cheese, salt, and pepper in a bowl. Mix until a dough forms.
- Roll the dough into small balls and then press them lightly with a fork to create the traditional gnocchi shape.
- Boil the gnocchi in salted water until they float to the top, then remove them with a slotted spoon.
- To make the pesto, combine the basil, olive oil, pine nuts, garlic, salt, and pepper in a food processor. Blend until smooth.
- Toss the cooked gnocchi in the pesto sauce and serve.
