This is a delicious and nutritious Keto friendly recipe for an Italian Breakfast Casserole. It's packed with protein, healthy fats, and low in carbs, making it perfect for those following a ketogenic diet.

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. In a large skillet, cook the Italian sausage over medium heat until browned. Remove from the skillet and set aside.
  3. In the same skillet, add the onion and bell pepper. Cook until softened.
  4. Add the spinach and mushrooms to the skillet and cook until the spinach is wilted and the mushrooms are browned.
  5. In a large bowl, whisk together the eggs, heavy cream, salt, and pepper.
  6. Add the cooked sausage, vegetables, and shredded cheese to the egg mixture and stir to combine.
  7. Pour the mixture into a greased 9x13 inch baking dish.
  8. Bake for 25-30 minutes, or until the eggs are set and the top is golden brown.
  9. Let the casserole cool for a few minutes before slicing and serving.
