Keto Italian Breakfast Casserole[edit | edit source]
This is a delicious and nutritious Keto friendly recipe for an Italian Breakfast Casserole. It's packed with protein, healthy fats, and low in carbs, making it perfect for those following a ketogenic diet.
Ingredients[edit | edit source]
- 1 lb Italian sausage
- 1 medium onion, chopped
- 1 medium bell pepper, chopped
- 1 cup spinach, chopped
- 1 cup mushrooms, sliced
- 12 large eggs
- 1/2 cup heavy cream
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
Instructions[edit | edit source]
- Preheat your oven to 375 degrees F (190 degrees C).
- In a large skillet, cook the Italian sausage over medium heat until browned. Remove from the skillet and set aside.
- In the same skillet, add the onion and bell pepper. Cook until softened.
- Add the spinach and mushrooms to the skillet and cook until the spinach is wilted and the mushrooms are browned.
- In a large bowl, whisk together the eggs, heavy cream, salt, and pepper.
- Add the cooked sausage, vegetables, and shredded cheese to the egg mixture and stir to combine.
- Pour the mixture into a greased 9x13 inch baking dish.
- Bake for 25-30 minutes, or until the eggs are set and the top is golden brown.
- Let the casserole cool for a few minutes before slicing and serving.
