  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Season the chicken breasts with the cumin, paprika, garlic powder, onion powder, salt, and pepper.
  3. Heat the olive oil in a skillet over medium heat. Add the chicken breasts and cook until browned on both sides, about 5-7 minutes per side.
  4. While the chicken is cooking, prepare the zucchini rice. In a separate skillet, sauté the onion and bell pepper until soft. Add the grated zucchini and cauliflower, and cook until tender.
  5. Add the diced tomato, cilantro, and lime juice to the zucchini rice. Stir to combine and cook for an additional 2-3 minutes.
  6. Once the chicken is cooked through, serve it on top of the zucchini rice.
