- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 cup zucchini, grated
- 1/2 cup cauliflower, grated
- 1/2 cup bell pepper, diced
- 1/2 cup onion, diced
- 1/2 cup tomato, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced

- Preheat your oven to 375 degrees F (190 degrees C).
- Season the chicken breasts with the cumin, paprika, garlic powder, onion powder, salt, and pepper.
- Heat the olive oil in a skillet over medium heat. Add the chicken breasts and cook until browned on both sides, about 5-7 minutes per side.
- While the chicken is cooking, prepare the zucchini rice. In a separate skillet, sauté the onion and bell pepper until soft. Add the grated zucchini and cauliflower, and cook until tender.
- Add the diced tomato, cilantro, and lime juice to the zucchini rice. Stir to combine and cook for an additional 2-3 minutes.
- Once the chicken is cooked through, serve it on top of the zucchini rice.
