Keto Mexican Shrimp Ceviche Aguachile is a delicious and refreshing dish that is perfect for those following a keto diet. This recipe is packed with healthy fats and proteins, and is low in carbs, making it a great choice for those trying to maintain a state of ketosis.

- 1 lb of shrimp, peeled and deveined
- 1/2 cup of lime juice
- 1/2 cup of lemon juice
- 1 cucumber, diced
- 1 avocado, diced
- 1/2 red onion, thinly sliced
- 1 jalapeno, seeds removed and finely chopped
- 1/4 cup of chopped cilantro
- Salt and pepper to taste

- In a large bowl, combine the shrimp, lime juice, and lemon juice. Let the shrimp marinate in the fridge for about 15-20 minutes, or until they turn pink and are cooked through.
- While the shrimp are marinating, prepare the rest of the ingredients. Dice the cucumber and avocado, thinly slice the red onion, and finely chop the jalapeno and cilantro.
- Once the shrimp are cooked, drain the excess lime and lemon juice from the bowl. Add the cucumber, avocado, red onion, jalapeno, and cilantro to the bowl with the shrimp. Season with salt and pepper to taste.
- Mix everything together until well combined. Serve the ceviche chilled.
