Keto Pulled Pork Afelia[edit | edit source]
Ingredients[edit | edit source]
- 1.5 kg pork shoulder
- 2 tablespoons olive oil
- 1 tablespoon coriander seeds
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 1 teaspoon black peppercorns
- 4 garlic cloves, crushed
- 1 tablespoon red wine vinegar
- 1 tablespoon soy sauce
- 1 tablespoon erythritol
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup water
Instructions[edit | edit source]
- Preheat your oven to 160°C (320°F).
- In a small pan, toast the coriander, cumin, fennel seeds, and black peppercorns until fragrant. Grind in a spice grinder or mortar and pestle.
- Rub the pork shoulder with olive oil, then the spice mixture.
- Place the pork in a roasting pan. Mix together the garlic, red wine vinegar, soy sauce, erythritol, salt, and pepper. Pour over the pork.
- Add water to the pan. Cover with foil and roast for 4 hours, or until the pork is tender and pulls apart easily with a fork.
- Remove from the oven and let rest for 10 minutes before pulling apart with two forks.
