  1. Preheat your oven to 160°C (320°F).
  2. In a small pan, toast the coriander, cumin, fennel seeds, and black peppercorns until fragrant. Grind in a spice grinder or mortar and pestle.
  3. Rub the pork shoulder with olive oil, then the spice mixture.
  4. Place the pork in a roasting pan. Mix together the garlic, red wine vinegar, soy sauce, erythritol, salt, and pepper. Pour over the pork.
  5. Add water to the pan. Cover with foil and roast for 4 hours, or until the pork is tender and pulls apart easily with a fork.
  6. Remove from the oven and let rest for 10 minutes before pulling apart with two forks.
