Keto Reuben Skillet is a delicious and nutritious dish that is perfect for those following a keto diet. This recipe is easy to prepare and packed with flavors from corned beef, sauerkraut, and Swiss cheese.
Ingredients[edit | edit source]
- 1 lb corned beef, chopped
- 1 cup sauerkraut, drained
- 1 cup shredded Swiss cheese
- 1/2 cup mayonnaise
- 1/4 cup ketchup
- 1 tbsp Dijon mustard
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste

- Preheat your oven to 350 degrees F (175 degrees C).
- In a large skillet, cook the corned beef over medium heat until it is heated through.
- Add the sauerkraut to the skillet and stir to combine with the corned beef.
- In a small bowl, combine the mayonnaise, ketchup, Dijon mustard, garlic powder, and onion powder. Stir until well combined.
- Pour the sauce over the corned beef and sauerkraut in the skillet. Stir to combine.
- Sprinkle the shredded Swiss cheese over the top of the mixture in the skillet.
- Place the skillet in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly.
- Season with salt and pepper to taste before serving.
