This is a delicious and healthy recipe for a Keto Sesame Salmon Thai Curry Cabbage. It's a perfect dish for those following a keto diet as it's low in carbs and high in healthy fats.
Ingredients[edit | edit source]
- 4 salmon fillets
- 2 tablespoons sesame oil
- 1 cabbage, shredded
- 1 can coconut milk
- 2 tablespoons Thai curry paste
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 lime, juiced
- Salt and pepper to taste
- Sesame seeds for garnish
Instructions[edit | edit source]
- Preheat your oven to 400 degrees F (200 degrees C).
- Season the salmon fillets with salt and pepper.
- Heat the sesame oil in a large oven-safe skillet over medium heat.
- Add the salmon fillets to the skillet and cook for 2-3 minutes on each side, until golden brown.
- Remove the salmon from the skillet and set aside.
- In the same skillet, add the shredded cabbage and cook for 5-7 minutes, until softened.
- Add the coconut milk, Thai curry paste, soy sauce, fish sauce, and lime juice to the skillet. Stir well to combine.
- Return the salmon fillets to the skillet, nestling them into the cabbage.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, until the salmon is cooked through.
- Garnish with sesame seeds before serving.
