Keto Thai Fish Curry with Coconut Milk[edit]
This is a delicious and easy-to-make Keto Thai Fish Curry with Coconut Milk. It's a perfect dish for those who are on a ketogenic diet and love Thai cuisine.
Ingredients[edit]
- 2 tablespoons of coconut oil
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 2 tablespoons of Thai red curry paste
- 1 can of coconut milk
- 1 pound of white fish fillets, cut into chunks
- 1 red bell pepper, sliced
- 1 cup of spinach
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions[edit]
- Heat the coconut oil in a large pan over medium heat.
- Add the onion, garlic, and ginger to the pan and sauté until the onion is translucent.
- Stir in the Thai red curry paste and cook for another minute.
- Pour in the coconut milk and bring the mixture to a simmer.
- Add the fish chunks and red bell pepper to the pan. Cover and cook for about 10 minutes, or until the fish is cooked through.
- Stir in the spinach and cook until it wilts.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
