Keto Zoodle Pot Beef Pho is a delicious and healthy dish that is perfect for those following a keto diet. This recipe is packed with flavor and is sure to satisfy your cravings.
Ingredients[edit | edit source]
- 1 lb of beef brisket
- 4 cups of beef broth
- 1 onion, sliced
- 4 cloves of garlic, minced
- 1 piece of ginger, sliced
- 2 star anise
- 1 cinnamon stick
- 2 tablespoons of fish sauce
- 1 tablespoon of erythritol
- 2 zucchinis, spiralized into noodles (zoodles)
- Fresh cilantro, mint, and basil for garnish
- Lime wedges for serving
Instructions[edit | edit source]
- In a large pot, add the beef brisket, beef broth, onion, garlic, ginger, star anise, and cinnamon stick. Bring to a boil, then reduce heat and simmer for 2 hours.
- Remove the beef from the pot and slice thinly. Set aside.
- Strain the broth to remove the solids. Return the broth to the pot and add the fish sauce and erythritol. Bring to a simmer.
- Add the zoodles to the pot and cook for 2-3 minutes, until tender.
- Divide the zoodles and beef slices between bowls. Pour over the hot broth.
- Garnish with fresh herbs and serve with lime wedges on the side.
