Keto Zoodle Pot Beef Pho is a delicious and healthy dish that is perfect for those following a keto diet. This recipe is packed with flavor and is sure to satisfy your cravings.

  1. In a large pot, add the beef brisket, beef broth, onion, garlic, ginger, star anise, and cinnamon stick. Bring to a boil, then reduce heat and simmer for 2 hours.
  2. Remove the beef from the pot and slice thinly. Set aside.
  3. Strain the broth to remove the solids. Return the broth to the pot and add the fish sauce and erythritol. Bring to a simmer.
  4. Add the zoodles to the pot and cook for 2-3 minutes, until tender.
  5. Divide the zoodles and beef slices between bowls. Pour over the hot broth.
  6. Garnish with fresh herbs and serve with lime wedges on the side.
