A delicious, keto-friendly dessert that is sure to satisfy your sweet tooth. This recipe for Lemon Lime Poppy Seed Cheesecakes is not only low in carbs, but also high in flavor.

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the almond flour, coconut flour, erythritol, melted butter, and vanilla extract. Mix until well combined.
  3. Press the mixture into the bottom of a lined muffin tin to form the crust.
  4. Bake the crust for 10 minutes, then remove from the oven and set aside.
  5. In a separate bowl, beat the eggs, cream cheese, heavy cream, lemon zest, lemon juice, lime zest, lime juice, and poppy seeds until smooth.
  6. Pour the cream cheese mixture over the crust in the muffin tin.
  7. Bake for 20-25 minutes, or until the cheesecakes are set.
  8. Allow the cheesecakes to cool in the muffin tin for 10 minutes, then transfer to a wire rack to cool completely.
  9. Refrigerate for at least 2 hours before serving.
