Lemon lime poppy seed cheesecakes
A delicious, keto-friendly dessert that is sure to satisfy your sweet tooth. This recipe for Lemon Lime Poppy Seed Cheesecakes is not only low in carbs, but also high in flavor.
Ingredients[edit]
- 1 cup Almond Flour
- 1/4 cup Coconut Flour
- 1/4 cup Erythritol
- 1/2 cup Butter, melted
- 1 tsp Vanilla Extract
- 2 Eggs
- 2 cups Cream Cheese
- 1/2 cup Heavy Cream
- Zest and juice of 1 Lemon
- Zest and juice of 1 Lime
- 2 tbsp Poppy Seeds
Instructions[edit]
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the almond flour, coconut flour, erythritol, melted butter, and vanilla extract. Mix until well combined.
- Press the mixture into the bottom of a lined muffin tin to form the crust.
- Bake the crust for 10 minutes, then remove from the oven and set aside.
- In a separate bowl, beat the eggs, cream cheese, heavy cream, lemon zest, lemon juice, lime zest, lime juice, and poppy seeds until smooth.
- Pour the cream cheese mixture over the crust in the muffin tin.
- Bake for 20-25 minutes, or until the cheesecakes are set.
- Allow the cheesecakes to cool in the muffin tin for 10 minutes, then transfer to a wire rack to cool completely.
- Refrigerate for at least 2 hours before serving.
