Low carb ajiaco
Low Carb Ajiaco[edit | edit source]
Ajiaco is a popular dish in Colombia, traditionally made with chicken, three varieties of potatoes, and the Galinsoga parviflora herb. This version of the recipe is modified to be keto-friendly, replacing the potatoes with low-carb alternatives.
Ingredients[edit | edit source]
- 1 lb Chicken breast
- 1 large Cauliflower head
- 1 large Turnip
- 1 large Rutabaga
- 1 bunch of Cilantro
- 1 bunch of Guascas (Galinsoga parviflora)
- 4 cloves of Garlic
- 1 large Onion
- 2 Avocados
- Salt and Pepper to taste
- Cream for serving
Instructions[edit | edit source]
- Start by chopping the chicken into bite-sized pieces and seasoning with salt and pepper.
- In a large pot, sauté the chopped onion and garlic until they become translucent.
- Add the chicken to the pot and cook until it's no longer pink.
- Chop the cauliflower, turnip, and rutabaga into small pieces and add them to the pot.
- Cover the ingredients with water and bring to a boil.
- Once boiling, reduce the heat and let it simmer for about 30 minutes.
- Add the guascas and cilantro, then let it simmer for another 10 minutes.
- Serve the ajiaco hot, topped with slices of avocado and a dollop of cream.
