A delicious and healthy keto friendly recipe, the Low Carb Chicken Curry is a perfect dish for those who are on a ketogenic diet. This recipe is packed with flavors and is sure to satisfy your taste buds without compromising your diet.
Ingredients[edit | edit source]
- 500g Chicken breast, cut into pieces
- 2 tbsp Coconut oil
- 1 large Onion, finely chopped
- 3 cloves Garlic, minced
- 1 tbsp fresh Ginger, grated
- 2 tbsp Curry powder
- 1 can Coconut milk
- 1 cup Chicken broth
- Salt and Pepper to taste
- Fresh Cilantro for garnish
Instructions[edit | edit source]
- Heat the coconut oil in a large pan over medium heat.
- Add the onion, garlic, and ginger to the pan and sauté until the onion becomes translucent.
- Add the chicken pieces to the pan and cook until they are no longer pink in the middle.
- Sprinkle the curry powder over the chicken and stir well to coat the chicken in the spices.
- Pour in the coconut milk and chicken broth, and stir well.
- Reduce the heat to low, cover the pan, and let the curry simmer for about 20 minutes.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
