Low Carb Chicken Skewers with Fries and Dip[edit | edit source]
Ingredients[edit | edit source]
- Chicken breast (500g)
- Olive oil (2 tablespoons)
- Garlic powder (1 teaspoon)
- Paprika (1 teaspoon)
- Salt and pepper to taste
- Zucchini (2 medium-sized)
- Parmesan cheese (1/2 cup)
- Almond flour (1/2 cup)
- Egg (1 large)
- Mayonnaise (1/2 cup)
- Dijon mustard (1 tablespoon)
- Lemon juice (1 tablespoon)
Instructions[edit | edit source]
- Cut the chicken into 1-inch cubes and place them in a bowl.
- Add the olive oil, garlic powder, paprika, salt, and pepper to the bowl and mix until the chicken is well coated.
- Thread the chicken onto skewers and set aside.
- Preheat your grill or broiler and cook the chicken skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through.
- While the chicken is cooking, cut the zucchini into fries shape.
- In a separate bowl, mix the parmesan cheese and almond flour.
- Dip each zucchini fry into the beaten egg, then into the cheese and flour mixture.
- Place the coated zucchini fries onto a baking sheet and bake at 200°C for 15-20 minutes, until golden and crispy.
- To make the dip, mix the mayonnaise, Dijon mustard, and lemon juice in a small bowl.
- Serve the chicken skewers with the zucchini fries and dip on the side.
